Seafood Paella

This Spanish dish, prepared by my girlfriend's husband, was so delicious that I had to get the recipe. It fits perfectly within our dietary restrictions and is truly delightful. I'm happy I took a photo of it, as it tasted just as wonderful as I had anticipated it to be!

Ingredients


  • Shrimp

  • Mussels

  • Lemon

  • Red bell peppers

  • Coriander

  • White Onion

  • Garlic powder

  • Extra-virgin olive oil

  • Basmati rice

  • Turmeric

  • Black pepper

  • Onion powder

  • Vegetable broth

  • Capers

  • Chili flakes




Directions On How To Make Yellow Rice


  1. Toast the Rice: Toasting the rice in some olive or coconut oil instead of butter for a dairy free option, before you cook it. Melt the coconut oil in a frying pan and gently stir the rice until it begins to lightly brown.


  2. Season the Rice: Stir in the garlic, onion powder, turmeric, salt, and pepper.


  3. Add Vegetable Broth: Once the broth is added, raise the heat and bring it to a boil and cover. Simmer for 20-25 minutes.


  4. Fluff the Rice: Remove the rice from the stove and use a fork to fluff the rice. Stir in the chopped cilantro and parsley. Reserve a little extra for garnish.




Directions On How To Cook Together


Step 1


Warm oil on a large skillet over medium-high heat. Add the onions, shrimp and mussels; cook until the onions are soft and the shrimp has turned orange and mussel shells have opened. (approximately 7 minutes) Add the garlic and stir; cook until it becomes fragrant, about 30 seconds more.


Step 2


Pour about 1 1/2 cups of water into the pan and bring it to a boil. Mix in the yellow rice mix and capers. Let the rice mixture boil for 1 minute, then cover the pan tightly. Lower the heat to medium-low and let it simmer for 12 minutes.


Step 3

Arrange Red pepper strips over rice; sprinkle with parsley and coriander.
