Afghani-Inspired Vegetarian Dish

Ingredients


  • Quinoa

  • Green Beans

  • Raisins

  • Green olives

  • Sweet Potatoes

  • Black Beans

  • Coconut Milk

  • White onions

  • Celery

  • Cinnamon

  • Cardamon

  • Cumin

  • Unrefined coconut oil

  • Water





Directions


  1. Cook quinoa in rice cooker or on stove.

  2. In a frying pan place coconut oil on low heat and out diced onions, celery and diced sweet potatoes to cook.

  3. Meanwhile steam or boil green beans.

  4. Place coconut milk, black beans, olives, green beans, raisins in frying pan.

  5. Cook on medium-low heat.

  6. Place all herbs and spices on top.

  7. Once sweet potatoes are soft, reduce heat and let simmer.

  8. Place water in pan as needed to ensure ingredients do not get dry rather stay moist.

  9. Place quinoa in a serving dish, and place vegetables , herbs and spices on top.

  10. Mix together and sprinkle a pinch of sea salt.
