Kidney Bean Potato Vegetable Soup

I made this soup spontaneously and it was so comforting and delicious that my daughters asked me to make it again for dinner which is a rarity as they do not like to eat the same dish twice in a day. This soup had a sweet taste to it which surprised me once I tried it, but was still good. As always it's nourishing and easy to make...





Ingredients


  • White kidney beans

  • White potatoes

  • Sweet Potatoes

  • Carrots

  • Celery

  • Onions

  • Coconut milk

  • Coconut oil

  • Spinach

  • Oregano

  • Thyme

  • Paprika\

  • Onion powder

  • Garlic Powder

  • Tomato sauce

  • Basil

  • Chili flakes

  • Sea salt




Directions


  1. Chop your carrots, celery and onions and put them in a pot.

  2. Add coconut oil and cook on medium high until tender.

  3. Peel and chop up your sweet and white potatoes and place the pot.

  4. Add in tomato sauce, and fill the rest of the pot up with water.

  5. Add in herbs and spices and raise heat.

  6. Bring water to boil, then simmer..

  7. Add kidney beans and spinach at the end.
