Hazelnut Olive Veggie Quinoa

Before I cut out wheat out of my diet, I used to make various delicious couscous dishes that were fresh and simple. This evening I made up a meal with Yemen spices that was mouth-watering.. if you like Arabian spices that is. This dish took 15 minutes to make...

Ingredients


  • White qunioa

  • Spinach

  • Tomatoes

  • Cucumber

  • Garlic stuffed olives

  • Shaved carrots

  • Raw and unsalted hazelnuts

  • Green onions

  • Extra-virgin olive oil

  • Lemon

  • Turmeric

  • Cardamon

  • Coriander ground

  • Cumin





Directions


  1. Cook quinoa in rice cooker or on stove top.

  2. Cut up all vegetables and place in a salad bowl.

  3. Add in spices and drizzle olive oil and lemon on top.

  4. Once quinoa is cooked , place in fridge for 10 minutes to cool down.

  5. Once the quinoa is cooled off, add into salad bowl.

  6. Mix all ingredients together.




 Et voila! Ready to Enjoy. Buon Appetito!
